Southern Yumminess!!!

Shrimp and Grits!! mmmm....just saying it makes my mouth water and my tummy growl!!  This is by far one of my all time favorites!  While trying to find the perfect recipe, I came across the "copy cat" recipe from Bullfish Grill.....Every been there??  you should!  It's amazing!  and they have the BEST shrimp and grits!!  Are you ready??  Here is the recipe....tweaked a little of course....Daddy K style!!



Ingredients
6 cups water
1/2 teaspoon salt
2 cups quick-cooking grits
1 cup grated sharp cheddar cheese
Pinch or two of ground nutmeg
Louisiana Hot sauce
8 bacon slices, coarsely chopped
2 pounds large uncooked shrimp, peeled, deveined
1/2 pound mushrooms, sliced
2 cups sliced green onions
2 large garlic cloves, minced
2 1/2 tablespoons fresh lemon juice
1/4 cup chopped fresh parsleyButter to taste

Serving Size:  4ish....

Boil 6 cups of salted water in a very large pot!

Whisk in grits. Reduce the heat, cover and simmer until your grits are good and thick.  About 10 minutes or so....

Add in 1 cup of cheese, butter,  and a pinch or two of nutmeg. (I think nutmeg is the magic ingredient)

Next mix in your hot sauce.  (We like things spicy so we kept adding until we tasted a little kick in the grits!!)  Cover and set aside.

Cook your bacon until it's brown...not crispy!  Move the bacon to a small bowl.  Drain the grease from your pan.

Add shrimp to same pan and cook until it's pink.  Shrimp cooks quick!  so watch the color closely!  Move the shrimp to a plate

Saute your mushrooms in the same pan that you cooked the bacon and shrimp.  Once the mushrooms are soft, add your green onions and garlic.

Return the shrimp and bacon to the pan. Mix in lemon juice. Season with salt, pepper and hot sauce (Again, We used LOTS of Louisiana Hot Sauce!).
Bring grits to a simmer. Add water if the grits are too thick.

Now it's time to serve!!!  Place grits in your bowl, and top with the magic shrimp mixture!  Then decorate it up with some parsley!


And there you go!!  It's as easy as that!!!  You better have your stretchy pants ready! You'll need them after going back for seconds!!  Enjoy!!

  1. This sounds amazing! I have never been a fan of grits...it's hard for me to type that since I was born and raised in Alabama, but....this recipe may have me trying them again! thanks for sharing!
